If you have raw fish (just caught) How do you start preparing them to be cooked in the edible form?

Someone just sold me yesterday freshly caught Canocchie (type of Mantis Shrimp/Squilla Mantis) and I had to actually google them to find what they are, they're very famous in Asian cultures also in Italy and Spain, I found some recipes that I could do, however the problem remains, the shrimp is raw ! it's freshly caught out, so any idea how do you clean them?

Most shellfish like crayfish, lobster, clams ....you just give a quick wash
then
"Let the shrimp boil very shortly in salted water, putting 2 at a time in the pan and picking them out when they float. Set aside. add pressed and chopped garlic,chopped parsley and a little salt and olive oil.

(after boiling them cut all the seam around to allow people open them without too much effort and stains all around when at table.)"
